Rainbow Fruit Kabobs

These easy rainbow fruit kabobs are a fun, no-bake way to serve fresh fruit at any party or as a healthy snack for kids. Threaded with strawberries, pineapple, melon, grapes, kiwi, and blueberries and served with a creamy honey-lime Greek yogurt dip, they come together in just 20 minutes with no cooking required.

Ingredients
  

For the Kabobs
  • 12 strawberries hulled
  • 1 cup pineapple cut into 1-inch cubes
  • 1 cup watermelon cubed or cut into stars
  • 1 cup cantaloupe balled or cubed
  • 12 green grapes
  • 12 purple grapes
  • 12 blueberries
  • 2 kiwis peeled and thickly sliced
For the Honey-Lime Yogurt Dip
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp fresh lime juice

Equipment

  • Wooden or bamboo skewers (6-inch)
  • Cutting board and sharp knife
  • Melon baller
  • Small star or flower cookie cutter (optional)

Method
 

  1. Wash all the fruit and pat it dry. Cut everything into roughly 1-inch pieces, and use a cookie cutter on the watermelon if you'd like stars.
  2. Thread the fruit onto each skewer in rainbow order: strawberry, cantaloupe, pineapple, green grape, kiwi, blueberry, then purple grape.
  3. In a small bowl, stir together the Greek yogurt, honey, and lime juice until smooth.
  4. Arrange the skewers on a platter and serve with the dip on the side. Chill until ready to serve.

Notes

Prevent browning: If using banana or apple, toss the pieces in 1 tablespoon of lemon or pineapple juice before threading, or add them just before serving.
Make ahead: Assemble with non-browning fruit (grapes, melon, pineapple, berries) up to 24 hours in advance and keep tightly covered in the refrigerator. Add delicate fruit just before serving.
Grilling option: For grilled fruit kabobs, soak the wooden skewers for 20 minutes first, then grill brushed fruit 2-3 minutes per side.
