Ingredients

Base
  • 1 cup full-fat cottage cheese fresh, mild brand (not tangy)
  • 3/4 cup whole milk or high-protein milk like Fairlife
  • 2-4 tbsp sweetener honey, maple syrup, sugar, or monk fruit
  • 1 tsp vanilla extract
  • 1 pinch salt
Optional
  • 1-2 tbsp heavy cream for extra creaminess
  • 1 scoop protein powder add a splash more liquid if using

Equipment

  • Ninja Creami
  • Blender

Method

  1. Add the cottage cheese, milk, sweetener, vanilla, and salt to a blender. Blend until completely smooth with no curds remaining — blend longer than you think to avoid graininess.
  2. Pour the mixture into an empty Ninja Creami pint, filling no higher than the max fill line.
  3. Freeze the pint flat, with the lid OFF, for a full 24 hours. Freezing with the lid on can create a hump that damages the blade.
  4. Run warm water over the outside of the pint for about 30 seconds to loosen the edges, then place it in the Ninja Creami.
  5. Process on the Lite Ice Cream setting. The first spin will look crumbly or powdery — this is normal.
  6. Add a splash of milk and select Re-Spin. Repeat 1 to 3 times until smooth and creamy.
  7. Add any mix-ins on the mix-in setting, then scoop and serve right away.

Notes

No pudding mix needed: full-fat cottage cheese acts as a natural stabilizer. For extra creaminess without pudding mix, add a splash of heavy cream, a scoop of collagen or protein powder, or a tiny pinch of guar gum.
Crumbly first spin? Totally normal — add a splash of milk and re-spin until creamy.
Flavor it: add cocoa powder for chocolate, peanut butter for PB, or blended strawberries for strawberry. Add chips, cookies, or fruit on the mix-in setting.
Storage: keep leftovers in the pint with the lid on; re-spin before serving since it refreezes solid.
