Ingredients
  

Cake
  • 1 box vanilla or white cake mix or homemade equivalent
  • 1/4 cup vegetable oil only if using boxed cake mix
Frosting
  • 1/2 cup unsalted butter room temperature
  • 1 cup icing sugar also called powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp milk
Assembly
  • 3.5 cups chocolate or candy melts any variety or combination
  • 40 cake pop sticks
  • 1 pack sprinkles or decoration of choice

  • Mixing Bowl
  • Hand or stand mixer
  • Tray
  • Microwave-safe mug
  • Spoon or scoop

Method
 

  1. Prepare the cake according to box instructions, adding 1/4 cup vegetable oil if using boxed mix. Let it cool and crumble it into fine crumbs.
  2. Beat butter, icing sugar, vanilla, and milk until light and fluffy. Add 3/4 of the frosting to the cake crumbs and mix until moldable. Adjust as needed.
  3. Roll into 1-inch balls and chill for 30 minutes. Re-roll for smoothness and chill again for 1 to 1.5 hours.
  4. Melt chocolate or candy melts. Dip the tip of each stick in melted chocolate and insert into cake balls. Let set, then dip completely and decorate.
  5. Place upright to set in a stand, foam, or rice-filled glass. Chill until firm and enjoy.

Notes

Use candy melts for a smoother dip and quicker setting. Avoid over-frosting the mixture to keep texture firm, not mushy.
